Gold Leaf Saloon was a saloon located in Absolution, New Mexico. It was featured in "Cowboys & Aliens."
Overview[]
The saloon was opened by Doc Sorenson and Maria Sorenson in order to make a living in the New Mexico Territory. Doc despite being a doctor, could not find any work in his professions on the frontier. And due to his marriage to Maria, a woman of Mexican heritage, relocating to the East was not an option as interracial marriage was frowned upon.
Doc opted to set up a bar in the gold mining town of Absolution, wishing to relive his childhood memories of Maria's bar in Santa Fe when he was a child. The bar worked for a time, until the gold ran dry and Absolution slowly was becoming a ghost town by 1873.
However thanks to the Dollarhyde Ranch, money still flowed into the town, allowing Doc to maintain his business. Unfortunately he had to content with giving the ranch hands free drinks and worst of all putting up with Percy Dollarhyde's drunken antics and property damages to his business.
On one such days, Percy and his cronies watched as the brat shit at the saloon’s upstairs rooms. Doc came out angry telling Percy to knock it off despite Maria telling him not to get involved. But when Percy heard Doc’s complaints, then publicly humiliated Doc with his gun aiming it at his head and made the older man cower in fear.
Doc was helped up to his feet by Pastor Meacham who tried to diffuse the situation. This only served to have turn Percy’s bully on the paths by demanding handouts for his church.
But when he demanded “charity” from a drifter named Jake Lonergan, he got a kick in the nuts to his humiliation. Later Jake went to the saloon for a drink and was give top shelf rye whiskey and a meal of pasole by Maria for standing up to Percy.
However the lawmen of Absolution arrived to arrest Jake as he was a wanted felon. Despite being outnumbered Jake turned the tables in the sherif and his deputy, pointing a rifle at the former. Though he had the sherif at his mercy, Jake made it clear he would not shoot the man as his grandson was present, though he was finally knocked out by a drifter named Ella from behind.

Besides being a watering hole for the townsfolk and ranchers, Maria's cooking was well liked and the saloon was frequently visited.
Food[]
- Pasole: Maria's signature dish, taught to her by her mother, though normally made with pork, the meat is substituted with beef from the Dollarhydes.
